THE UTOPIAN DINNER
A FUTURISTIC 4-COURSE MENU
The Utopian Dinner is a culinary experience where the public gets the chance to taste possible dishes from the future. Each dish served during the evening represents a critical societal or environmental issue. The topics are not only represented in the ingredients we use for the dishes, but also in the music, the scent, the plates, and the visual aspect. The goal of the dinner is to create awareness about the topics addressed during the dinner and to start the conversation between knowledgable and influential people within the industry.

EXAMPLES OF DISHES:
FOOD FROM SALINE GROUND
Mashed potatoes and vegetables harvested on saline grounds.
PROGNOSIS: IN THE NEAR FUTURE, MORE THAT 125.000 HECTARES OF LAND IN THE NETHERLANDS WILL BECOME INCREASINGLY SALINE. TO BE ABLE TO STILL PRODUCE CROPS IN THE FUTURE CULTIVATION ON SOIL WITH HIGH SALT CONCENTRATIONS MUST BE DEVELOPED.
A salad made out of ingredients harvested within a radius of 7 km around the place of serving.
PROGNOSE: NUTRITION IS GOOD FOR 1/3 OF ALL TRANSPORT OVER THE WORLD. THIS DELIVERS A LARGE CONTRIBUTION TO THE INCREASE IN THE QUANTITY OF CO2 ON EARTH.
Pigeon, forgotten vegetables & roasted potatoes.
PROGNOSIS: IN 2050 THE WORLD POPULATION WILL REACH 9 BILLION. WE WILL NOT BE ABLE TO MANUFACTURE AND CONSUME MEAT IN THE WAY WE DO IT NOW.
A futuristic bouillabaisse with edible bioplastic. For a realistic representation of our oceans.
PROGNOSIS: ABOUT 8 MILLION METRIC TONS OF PLASTIC ENDS UP IN OUR OCEANS EACH YEAR. IF THIS DOES NOT STOP, THERE WILL BE MORE PLASTIC IN THE SEA THAN FISH BY 2050.
An appetizer made from rescued food.
PROGNOSIS: 1/4 OF ALL THE FOOD IS BEING WASTED. WE ALLE HAVE A PART TO PLAY IN REDUCING FOOD LOSS AND WASTE, NOT ONLY FOR THE SAKE OF FOOD BUT FOR THE RESOURCES THAT GO IN TO IT.
Wonderberries, miraculous minerals & sugarless sweets.
PROGNOSIS: 48.7% OF THE DUTCH WILL BE OVERWEIGHT. BECAUSE OF THE EXORBITANT QUANTITY OF SUGAR IN OUR FOOD. ON THE OTHER HAND WE WILL SEE AN INCREASE IN THE POPULARITY OF SUPERFOODS.
